This simple, savory fondue entails simmering bite-size pieces of chicken, tortellini, and chopped veggies in a ginger-flavored broth and then dipping the cooked food in a light sesame soy sauce. As with any chicken dish, you'll want to be sure the meat is done all the way through, so consider equipping young chefs with a kitchen timer to help them keep track of the cooking time (5 minutes or so). You can set out a plate of cherry or grape tomatoes for them to munch on while they wait.
Ingredients
- 1/2 cup low-sodium soy sauce
- 1/4 cup rice vinegar
- 2 tablespoons fresh lemon juice
- 1 tablespoon honey
- 2 teaspoons sesame oil
- 1 garlic clove, minced
- 4 cups chicken broth
- 2 teaspoons minced fresh ginger
SUGGESTED DIPPERS
- 1 to 1 1/2 pounds boneless skinless chicken breasts, cut into 1-inch-thick pieces (Note: It's important to keep raw chicken in its own bowl to avoid cross-contamination.)
- Broccoli florets
- Fresh cheese tortellini
- Small button mushrooms
Instructions
- Prepare the sesame dipping sauce by whisking together the soy sauce, rice vinegar, lemon juice, honey, sesame oil, and garlic in a small bowl. Set the mixture aside (it should stand for at least 15 minutes before you're ready to eat).
- Bring the chicken broth and ginger to a boil in a large saucepan. Pour the mixture into a fondue pot and set the flame to keep it at a simmer.
- Spear your dippers of choice onto a fork or skewer and submerge them in the broth to cook (chicken, tortellini, and broccoli will take 4 to 5 minutes; mushrooms, 1 to 2 minutes).
- For the finishing touch, dip the cooked pieces into the prepared sauce, then enjoy. Serves 4 to 6.
