A sweet bread that's great for a snack.
Ingredients
OAT BANANA BREAD
- 2 cups flour
- 1 cup rolled oats
- 2 tsp. baking soda
- 1 cup solid vegetable shortening
- 2 cups sugar
- 2 cups mashed ripe bananas (4 to 5 bananas)
- 4 eggs
- 1 cup chopped walnuts
MAPLE GLAZE
- 1 cup confectioners' sugar
- 1 tbsp. lemon juice
- 1/2 tsp. maple flavoring
Instructions
- Grease and dust with oatmeal an 8 to 10 cup tube pan. Combine flour, oats and baking soda and set aside. In a mixer bowl cream shortening and sugar. Beat in bananas, eggs and walnuts. Add dry ingredients; mix on low speed until thoroughly blended. Pour into pan. Bake in 350 degree oven 1 hour and 20 minutes, or until pick inserted into center comes out clean. Cool in pan 5 minutes. Turn out onto rack to cool completely. Drizzle maple glaze over bread.
- Maple Glaze: In a bowl, combine confectioners' sugar, lemon juice and maple flavoring. Gradually stir in enough water to make an icing of smooth, pourable consistency.
