Zucchini Bread Recipe

A delicious side to any pasta, salad, or meat dish you make.

What you'll need

  • 1-1/2 cups flour
  • 1-1/2 tsp. baking powder
  • 1-1/2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. salt
  • 1 egg, lightly beaten
  • 1/2 cup mild-flavored olive oil
  • 1/4 cup milk
  • 3/4 cup sugar
  • 2 cups shredded raw zucchini
  • 1 cup chopped walnuts

How to make it

  1. Preheat oven to 350 degrees. Grease and flour a 9 x 5 x 3 inch loaf pan. (Line with wax paper to be extra-sure that you can remove the loaf.)
  2. In a large bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg and salt; blend well and set aside.
  3. In a second bowl, combine the egg, olive oil, milk and sugar. Add to the dry ingredients and stir until partially combined. Stir in the zucchini and walnuts. Spoon into prepared pan and bake for 50 to 55 minutes, or until a toothpick comes out clean when inserted in center. Let cool in pan for 5 minutes, then turn out onto rack to cool completely. Makes 1 loaf.
