White Bean and Sausage Saute'

Well, I attempted beans in my slow cooker for the first time and it came out great! Check out Slow Cooker Beans. So now I was excited to use them. This recipe is adapted from Family Fun magazine. I really liked this dish because most of our dinners are served with a carb; rice, cous cous or pasta. We eat a lot of that stuff.  This dish was so filling so you didn't miss the side. I will definitely make this one again! As for the reviews - Little Man finished his plate (left a few spinach pieces behind though but that was expected). Sweet Girl had seconds. And luckily, there is a lot leftover so my husband can enjoy a big bowl after he gets in from his 8 hour drive tonight. Enjoy!

Ingredients:

  • 4 Italian sausages
  • 1 Tablespoon olive oil
  • 1/2 cup of chopped onion
  • 2 cloves of garlic, minced
  • 3/4 cup of chicken broth
  • 1 can (14 1/2 ounce) of diced tomatoes
  • 4 cups of cooked white beans
  • 1 teaspoon each sage and parsley
  • 2 cups baby spinach
  • salt and pepper to taste

Method

In a large pan, saute' sausages until they are cooked through, remove from pan and slice.

Heat the olive oil in the skillet and saute the onions for 4 minutes and add garlic, saute 1 minute more.  Add sausage back to skillet along with broth, tomatoes, beans, sage and parley. Bring the mixture to a boil and simmer for 5 minutes. Add the spinach and salt and pepper and cook until the spinach wilts, about 2 minutes.
