Semiya - Vermicelli Payasam Recipe

This is my version of vermicelli payasam which is The Husband's favourite treat.

Vermicelli kheer or semiya payasam (pudding) is a classic Indian dessert prepared with roasted vermicelli, milk and nuts. Normally I prepare sweet dishes only on special occasions or when I have guests or friends at home.

Ingredients

  • 1/2 cup vermicelli
  • 1/4 cup raisins and chopped almonds
  • a fee strands of saffron-soaked in few tablespoons of rose water for few minutes
  • 2-3 whole green cardamoms-crushed
  • 2 1/2 cups full fat milk
  • 3 tbsp ghee
  • 3/4 cup sugar

Method

In a heavy bottomed pan, heat the ghee. Fry the almonds and raisins until the raisins are plumped up; set aside. Using the same oil, fry the vermicelli until golden brown. Add in the milk and reduce the heat to low. Once the milk starts to simmer, add in the sugar, cardamom, almonds, raisins and saffron.

Simmer gently until payasam becomes slightly thickens. The amount of sugar can be altered according to your own taste.

Serve hot or cold.
