Roasted Fennel, Apples and Onions

I love roasting vegetables, I think its the best way to bring out a vegetables flavor. I also love the texture of roasting vegetables - you get both soft and crispy deliciousness! I found a variation of this recipe online (I believe on Shine) while trying to figure out what to make for dinner. I have never roasted my fruit before but figured I would give it a try. I served this fennel, onion and apple mixture over pork chops and it was great. I would make it again and serve it over just about anything - even a plate full of rice.

What You Need:

  • 1 large fennel bulb, trimmed and sliced (save some of the fronds for plating)
  • 1 large onion, sliced (red preferably)
  • 1 -2 large sweet apples sliced (I used my favorite - Braeburns)
  • 1 tablespoon olive oil

What You Do:

Preheat oven to 425

Toss fennel, apples and onion in olive oil and spread out on a rimmed baking pan.  Roast until golden, stirring a few times, 30-35 minutes.

If you want to make the pork with it:

About 10 minutes after mixture goes in oven - salt and pepper your pork chops and brown in an oven proof skillet.

Transfer to oven  and roast until done (about15-20 minutes)

When pork is done, transfer to another plate and let rest, meanwhile place ovenproof skillet on stove (careful handle will be hot) Stir in 3 tablespoons of apple cider vinegar and scrape up any brown bits in pan. Add the apple mixture and stir to combine.  Serve mixture over pork (or just about anything.)  Sprinkle with fennel fronds.
