I mentioned in an earlier post that I would be giving you this recipe for Curried Rice. This recipe is from one of my favorite cookbooks, The Gourmet Cookbook. I love Curry both the flavors it adds to the dish and the aroma that fills the house when you use it. This rice is very simple and makes a great side dish or add some veges and/or a protein and make an awesome rice bowl.
Ingredients:
- 3 tablespoons olive oil
- 1 medium onion, finely chopped
- 3 garlic cloves, finely chopped
- 4 teaspoons curry powder
- 2 cup of long grain rice
- 3 1/4 cups water
- 2 teaspoons salt
What you do:
Heat oil in a sauce pan over moderately low heat and saute onions and garlic until softened, 8-10 minutes. Add the curry powder and rice and cook, stirring for 1 minute. Add water and salt and bring to a boil, uncovered, without stirring, until steam holes appear in the top of rice and grains on top look dry, about 8 minutes.
Reduce heat to low and cover pan for another 15 minutes.
Remove from heat and let rice stand, covered, for 5 minutes, Fluff with fork.
